An ideal course for those who are new to the coffee sector or who want to deepen their knowledge within the fantastic culture of coffee. We will explore the journey of coffee from its origin in Ethiopia to the major commodity it is today, enjoyed by millions of people around the world. We will study everything from coffee cultivation, processing, roasting, tasting, and even preparation — this course provides an overview of the entire coffee supply chain.
Levels: Foundation . Intermediate . Professional
The course presents the fundamentals of sensory evaluation in a practical and interactive way. It explores how the human senses influence perception and how to apply this knowledge when assessing the natural characteristics of coffee. Students will gain hands-on experience in identifying a variety of sensory attributes and in tasting coffees using SCA’s Descriptive and Affective Evaluations. Participants gain insights into identifying specialty coffee qualities, as well as an overview of how to implement these practices.

The course introduces basic concepts about the production, trade, and evaluation of green coffee. Participants will learn about the specialty coffee supply chain from farm to roastery, including cultivation, harvesting, processing, drying, transportation, storage, and delivery. Within this supply chain, students take a closer look at the principles of coffee farming, processing, grading, trading, and portfolio management. Practical learning objectives and activities prepare students to carry out basic green coffee evaluations. A written exam tests theoretical knowledge based on the learning objectives of the Foundation course.

The course provides students with an understanding of the roasting process, including the physical changes that occur during roasting and how to control the sensory aspects of coffee from light to dark roasts. Students will also gain an understanding of the basic structure of a roasting machine, general maintenance, and fire prevention.
